Arguably one of the most popular street food among children and adults alike in India.
Sauce (Chaat)
- Open and start drinking 1 India beer
- Peel and finely chop 1 red onion
- Open and drain one can of chickpeas
- Heat 2 1/2 tbs of oil in a cooking pot
- Add the red onion and cook until golden
- Add 1 tbs of garlic ginger paste
- Add 1 tin of chopped tomato's
- Add spices
- 1 tsp salt
- 1/2 tsp turmeric
- 1 tps chilli power
- 1/2 tps garam masala
- 2-3 thin green chillies (optional)
- Cook for a few minutes
- Add 1/2 cup of water
- Add 1 tin of chickpeas
- Add 1 cup of water
- Cover and cook on medium-low heat ~10 mins
- Generally crush the chickpeas
- Add fresh coriander to finish sauce
Samosas
- Made sure samosas are defrosted
- Cook in a pan of oil until golden brown colour ~10 mins
- Let them cool a little
- Break samosas up into bite size pieces
Dish out
- Add sauce to a lovely serving dish and flatten out
- Add bite size samosas pieces, evenly distributed
- Lightly spread over sweet yoghurt
- Repeat with mint raitha
- Repeat with tamarind chutney
- Sprinkle uncooked red onions over the dish (1/2 medium onion)
- Add 1-2 chopped tomato's
- Add fresh coriander
- Add some bhujia (optional)
